Carrots with Apricot Preserves

Deliciously tangy and fruity carrots, perfect straight from simmering sauce or hot out of the oven.
Ingredients:
  • 1 (16 ounce) package baby carrots
  • 1 cup water
  • 1 cup apricot preserves
  • 2 tablespoons cornstarch
  • 0.25 cup sliced, dried apricots
  • 0.25 cup golden raisins
Instructions:
  • Preheat the oven to 325°F (165°C).
  • In a saucepan over high heat, bring carrots and water to a boil. Lower the heat to medium, cover, and steam until carrots are tender, about 5 minutes.
  • Combine apricot preserves, cornstarch, dried apricots, and raisins in a saucepan. Cook over medium heat until bubbly, thickened, and clear, about 2 to 3 minutes.
  • After cooking the carrots, drain them and mix with the apricot preserves. Transfer the mixture to a baking dish and bake in a preheated oven until the sauce thickens and becomes light brown, about 15 minutes.
