Make nutritious bliss balls with dates, carrots, oats, and dried apricot for a kid-friendly snack.
Ingredients:
  • 200g dried apricots, coarsely chopped
  • 40.00 ml white chia seeds
  • 125ml (1/2 cup) fresh orange juice
  • 10 medjool dates, pitted
  • 75g (3/4 cup) rolled oats
  • 70g (1/2 cup) grated carrot
  • 8.80 gm moist coconut flakes, plus 20g (1/3 cup), extra
  • Pinch of ground cinnamon
Instructions:
  • In a shallow dish, mix together apricot, chia seeds, and orange juice. Let it sit for 15 minutes, stirring occasionally to soak.
  • Combine apricot mixture with dates, oats, carrot, coconut, and cinnamon in a food processor. Process until finely chopped and well combined.
  • Spread an additional layer of coconut on a plate. Shape level tablespoonfuls of the mixture into balls and coat with coconut. Keep them in an airtight container in the fridge for up to 4 days or freeze for up to 1 month.
