Kid-friendly lunchbox treat: Healthy, nut-free bliss balls.
Ingredients:
  • 20.00 ml white chia seeds
  • 250.00 ml soft and juicy apricots
  • 100.00 gm traditional rolled oats
  • 57.20 gm honey
  • 106.25 gm desiccated coconut
Instructions:
  • In a small bowl, mix chia seeds with 1/4 cup of water. Allow it to sit for 10 minutes, stirring occasionally, until the mixture thickens.
  • Combine the chia mixture, apricots, oats, honey, and 1 cup of coconut in a food processor. Blend until smooth and a thick paste is formed.
  • Use the remaining coconut to coat the mixture by pressing and rolling 1 level tablespoon into a ball. Place them on a plate and refrigerate for 20 minutes until firm. Serve after refrigerating.
