Allergy-friendly cashew butter cookies: a delightful sweet treat for peanut butter lovers.
Ingredients:
  • 1.75 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 0.5 cup white sugar
  • 1 teaspoon vanilla extract
  • 0.5 cup cashew butter
  • 0.5 cup firmly packed brown sugar
  • 1 egg
  • 2 tablespoons milk
Instructions:
  • Preheat the oven to 350°F (175°C).
  • Combine the flour, baking soda, and salt in a small bowl.
  • Using an electric mixer, blend together butter, white sugar, and vanilla extract in a large bowl until smooth. Incorporate cashew butter, brown sugar, egg, and milk, continuing to beat until smooth. Slowly add the flour mixture and mix until a dough forms.
  • Form the dough into 1 1/2-inch balls and place them on a baking sheet. Use a fork to gently create a crosshatch pattern on the top of each ball.
  • Bake until beautifully golden for 12 to 14 minutes in a preheated oven.
