Quick Cashew Cookies with Brown Butter Icing

Indulgent cashew-filled sugar cookie dessert with brown butter icing. Ready in 40 minutes.
Ingredients:
  • 1 roll (16.5 oz) refrigerated sugar cookie dough
  • 3/4 cup coarsely chopped cashews
  • 1/2 cup white chocolate chunks or white vanilla baking chips
  • 1/3 cup butter (do not use margarine)
  • 1 1/2 cups powdered sugar
  • 1/4 teaspoon vanilla
  • 2 tablespoons milk
Instructions:
  • Preheat the oven to 350°F. Take a large bowl and crumble the cookie dough into it. Mix in the cashews and white chocolate chunks. Scoop the dough onto ungreased cookie sheets using a heaping teaspoon.
  • Bake until beautifully golden, then transfer to wire racks right away.
  • While the cookies bake, in a 1-quart saucepan, cook butter over medium heat, stirring constantly until it turns light golden brown. Take off the heat and mix in the rest of the icing ingredients until smooth.
  • Drizzle about 1 teaspoon of warm icing over the freshly baked cookies, reheating if needed for a pourable consistency.
