Prepare delicious crowd-pleasing chicken pasta salad with crunchy cashews and bell peppers.
Ingredients:
  • 3 cups uncooked tri-color rotini pasta
  • 4 cups cubed cooked chicken breast
  • 0.5 cup diced green bell pepper
  • 0.25 cup diced green onions
  • 1.5 cups mayonnaise (such as Hellman's®)
  • 0.75 cup packed brown sugar
  • 1 tablespoon cider vinegar
  • 1.5 teaspoons lemon juice
  • 1.5 teaspoons salt
  • 2 cups salted cashew halves
Instructions:
  • Bring a big pot of lightly salted water to a boil. Cook rotini until al dente, about 8 minutes. Drain and rinse with cold water.
  • Combine pasta, chicken, green pepper, and green onions in a spacious bowl.
  • Combine mayonnaise, brown sugar, vinegar, lemon juice, and salt in a small bowl, mixing until smooth. Pour the dressing over the pasta mixture and toss until evenly coated.
  • Chill in the fridge until the flavors meld and the dressing thickens, preferably overnight. Mix in cashews right before serving or up to 2 hours beforehand.
