Luscious lemon brownies topped with cashews and strawberries for a gourmet treat.
Ingredients:
  • cooking spray
  • 1 cup sifted all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.125 teaspoon baking soda
  • 1 cup white sugar
  • 0.33333334326744 cup vegetable oil
  • 1 egg, beaten
  • 1 lemon, zested and juiced
  • 0.5 cup chopped cashews
  • 10 fresh strawberries, sliced
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously spray an 8-inch baking dish with cooking spray.
  • Combine flour, salt, baking powder, and baking soda in one bowl. In a separate bowl, mix sugar, oil, egg, lemon juice, and lemon zest. Gently fold in the flour mixture until the batter forms. Transfer the batter to a prepared baking dish and sprinkle with cashews.
  • Bake in the preheated oven for 20-25 minutes until golden and set. Cut into squares and top with fresh strawberries.
