Irresistible banana-cashew bars topped with decadent browned butter cream cheese frosting.
Ingredients:
  • 1 cup granulated sugar
  • 1 cup mashed very ripe bananas (2 medium)
  • 1 cup Gold Medal™ flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped cashews
  • 1/2 cup butter (do not use margarine)
  • 3 1/4 cups powdered sugar
  • 1 teaspoon vanilla
  • 1 to 3 tablespoons milk
  • 24 cashew halves, if desired
Instructions:
  • 1. Preheat the oven to 350°F and grease a 13x9-inch pan with shortening or cooking spray. 2. In a large bowl, combine granulated sugar, bananas, 1/3 cup butter, and eggs until well mixed. 3. Fold in flour, baking powder, baking soda, and salt until fully incorporated. 4. Add cashews to the batter and spread it evenly in the prepared pan. 5. Bake for 22 to 26 minutes until a toothpick inserted in the center comes out clean. 6. Allow the cake to cool completely for about 40 minutes before serving.
  • In a 2-quart saucepan, melt 1/2 cup butter over medium heat until golden brown, stir constantly, then remove from heat. Gradually mix in powdered sugar using a spoon. Add vanilla and milk 1 tablespoon at a time until the frosting is smooth. Spread over cooled bars, score into 6 by 4 rows, and top each with a cashew half. Cut bars along scored lines. Enjoy!
