Chocolate mud muffins recipe

Indulge in irresistible Thermomix chocolate mud muffins, a healthier treat loved by all!
Ingredients:
  • 150g cashews, dry roasted or activated
  • 100g dark chocolate (minimum 70% cocoa), broken into pieces
  • 400g canned black beans, rinsed and drained (approx. 250g after draining)
  • 50g green banana flour
  • 60g banana, broken into pieces
  • 40.00 ml raw cacao powder
  • 4.40 gm natural vanilla extract
  • 120g coconut oil
  • 80g milk of choice
  • 60g honey
  • 4.00 gm gluten free baking powder
  • 50g walnuts (optional)
Instructions:
  • Preheat your oven to 160C and prepare a 12-hole muffin tray by lining it with cupcake liners.
  • Add cashews to the mixing bowl and grind for 6 seconds on high speed. Transfer the ground cashews to a separate bowl and keep them aside.
  • Add the chocolate to the mixing bowl and pulse for 5 seconds on speed 7. Scrape down the sides of the bowl with a spatula, then melt the chocolate for 3 minutes at 50°C on speed 1.
  • Combine beans, green banana flour, banana, cacao, eggs, vanilla, oil, milk, honey, and reserved cashews in a mixing bowl. Mix for 2 minutes on speed 4. Then scrape down the sides of the bowl with a spatula and blend for 30 seconds on speed 7.
  • Combine baking powder and walnuts into the mixture and mix on medium speed for 30 seconds. Let the mixture rest for 3 minutes, then transfer it to the muffin tray. Bake in a preheated oven at 160C for 25-30 minutes, or until cooked through. Allow it to cool before serving.
