Wow your guests with a decadent chocolate mud cake.
Ingredients:
  • 200g dark chocolate, chopped
  • 250g unsalted butter, chopped
  • 20.00 ml instant coffee
  • 100ml milk
  • 250g self-raising flour
  • 40g cocoa powder
  • 250g caster sugar
  • 4 eggs, lightly beaten
  • 4.40 gm vanilla extract
  • 150ml sour cream
  • 150g milk chocolate, chopped
  • 150g dark chocolate
  • 125ml thickened cream
  • 50g unsalted butter
Instructions:
  • Preheat the oven to 160C and generously grease a deep 23cm springform cake pan, then line it with baking paper.
  • Combine the chocolate, butter, coffee, and milk in a heatproof bowl over simmering water, stirring until smooth and melted. Let it cool completely before using.
  • Start by sifting flour and cocoa powder into a bowl. Next, add sugar and fold in the chocolate mixture along with eggs, vanilla extract, and sour cream.
  • Gently transfer the batter into the cake pan and bake in the oven for 60-70 minutes until a skewer inserted into the center comes out clean with some moist crumbs. Let it cool completely in the pan before serving.
  • To make the ganache, combine all ingredients in a small heatproof bowl placed over simmering water, ensuring the bowl doesn't touch the water. Stir continuously until smooth and melted. Allow it to cool slightly before using.
  • Unmold the chilled cake and generously spread the velvety ganache on top before presenting it to be enjoyed.
