Choc Guinness mud cake recipe

Guinness-infused chocolate mud cake for a rich, boozy treat.
Ingredients:
  • 250g butter, chopped
  • 400.00g dark chocolate (50% cocoa), chopped
  • 100g dark chocolate (70% cocoa), chopped
  • 215g (1 cup) caster sugar
  • 100g (1/2 cup firmly packed) dark brown sugar
  • 250ml (1 cup) Guinness Extra Stout
  • 26.80 gm golden syrup
  • 8.80 gm vanilla extract
  • 85g (1/3 cup) sour cream
  • 225g (1 1/2 cups) plain flour
  • 20.00 gm dark cocoa powder
  • 190g (3/4 cup) sour cream
  • 40.00 ml Guinness Extra Stout
  • 40.20 gm golden syrup
Instructions:
  • Preheat your oven to 160C/140C fan-forced, then generously grease a 22cm springform pan and line it with baking paper.
  • Combine butter, dark chocolate, sugars, Guinness, golden syrup, and vanilla in a saucepan over low heat. Stir continuously for 6-8 minutes until completely melted and smooth. Transfer the mixture to a large bowl and let it cool for 15 minutes.
  • In a small bowl, combine the eggs and sour cream by whisking. Pour the egg mixture into the chocolate mixture and mix until glossy. Add the flour, cocoa, and baking powder, and stir until combined. Pour the batter into the prepared pan. Bake for 1 hour and 10 minutes or until a skewer comes out with some crumbs when inserted in the center. Allow the cake to cool in the pan for 30 minutes before transferring to a wire rack to cool completely.
  • To prepare the ganache, combine chocolate, sour cream, Guinness, and golden syrup in a heatproof bowl set over a pot of simmering water (ensure the bottom of the bowl doesn't touch the water). Stir occasionally for 6-7 minutes until melted and velvety. Let it sit for 1 1/2 hours until thickened and easy to spread. Spread the ganache over the cake.
