Indulge in decadent chocolate mud cupcakes topped with luscious peanut butter frosting.
Ingredients:
  • 200g butter, chopped
  • 200g dark chocolate, chopped
  • 30g cocoa powder
  • 60ml coffee
  • 200g caster sugar
  • 3 eggs
  • 75g self-raising flour
  • 40g plain flour
  • 250g cream cheese, softened
  • 1 tsp vanilla bean paste
  • 230g icing sugar mixture
  • 200g ctn smooth peanut butter
  • 155g caster sugar
  • 80g peanuts
Instructions:
  • Preheat your oven to 160C. Prepare eighteen 1/3 cup (80ml) muffin pans by lining them with paper cases.
  • In a medium saucepan, melt the butter, chocolate, cocoa powder, and coffee over medium-low heat, stirring constantly for 5 minutes until smooth. Remove from heat and let it cool for 10 minutes before using.
  • Pour the mixture into a large bowl. Add sugar and stir well. Mix in the eggs until combined. Stir in the combined flours. Divide the batter evenly among the prepared pans. Bake in a preheated oven for 20 minutes or until a skewer comes out clean. Remove from oven and place on a wire rack to cool completely.
  • Make the peanut butter frosting by combining cream cheese and vanilla paste in a medium bowl using an electric mixer until smooth. Gradually add the icing sugar, then mix in the peanut butter until well combined using a wooden spoon.
  • Prepare a baking tray by lining it with parchment paper. Heat sugar in a medium frying pan over medium heat until melted and caramelized, stirring constantly for 5-7 minutes. Remove from heat, mix in peanuts, then spread the mixture onto the lined tray. Allow it to cool for 10 minutes before breaking it into shards.
  • Cover each cake with a generous amount of frosting and garnish with toffee shards before serving.
