Chocolate mud cupcakes

Delicious mini treats packed with flavor and charm.
Ingredients:
  • 125g butter, chopped
  • 100g dark chocolate, chopped
  • 125ml water
  • 2 tsp Instant Coffee Powder
  • 60ml liqueur
  • 200g brown sugar
  • 100g plain flour
  • 40g self-raising flour
  • 20.00 gm cocoa powder
  • Chocolate curls, to decorate
  • 200g dark chocolate
  • 125g sour cream
Instructions:
  • Preheat your oven to 160°C and line twelve 1/3-cup (80ml) muffin pans with paper cases.
  • In a medium saucepan over low heat, melt butter with chocolate, hot water, coffee powder, and coffee liqueur, stirring until smooth. Remove from heat, then mix in sugar and let cool for 5 minutes.
  • Sift the flours and cocoa over the chocolate mixture, then use a balloon whisk to combine. Add the egg and stir until well mixed.
  • Divide the mixture evenly into the pans. Bake in a preheated oven for 15-20 minutes or until fully cooked. Allow to cool completely on a wire rack.
  • Create a luxurious chocolate ganache by melting chocolate and sour cream in a heatproof bowl set over simmering water. Stir with a metal spoon for 2-3 minutes until the chocolate is melted and the mixture is silky smooth. Take it off the heat and enjoy the decadent result.
  • Finish the cakes by evenly spreading the decadent ganache on top and allow them to cool. Then, adorn with delicate chocolate curls for a stunning presentation.
