Cheesy tomato-topped broiled fish fillets - a heavenly Mediterranean dish in just 20 minutes.
Ingredients:
  • 4 (4 ounce) fillets catfish
  • 1 tablespoon lemon juice
  • 0.25 teaspoon black pepper
  • 0.25 cup freshly grated Parmesan cheese
  • 2 tablespoons butter, softened
  • 1.5 tablespoons mayonnaise
  • 4 roma tomatoes or sun-dried tomatoes, sliced thin
Instructions:
  • Preheat the broiler to 500 degrees Fahrenheit. Grease a broiling pan with nonstick cooking spray. Brush the fillets with lemon juice on both sides, season with salt and pepper, then place them flat side up on the pan.
  • Combine Parmesan cheese, butter, and mayonnaise in a small bowl.
  • Broil the fish 4 inches from the heat for 6 minutes. Take the pan out of the oven, flip the fillets, spread cheese mixture evenly on each, then add tomato slices. Broil for another 4 to 6 minutes until the fish flakes easily.
