Delicious white fish chowder, a comforting and easy dish. Perfect with crackers and cornbread.
Ingredients:
  • 1 pound sliced bacon
  • 1 large onion, chopped
  • 5 medium potatoes, peeled and diced
  • 2 cups water, or as needed
  • 1.5 pounds cod fillets, cut into 1 inch cubes
  • 1 (12 fluid ounce) can evaporated milk
  • 0.5 cup whole milk
Instructions:
  • In a large stockpot over medium-high heat, crisp up the delicious bacon, turning occasionally, until perfectly browned, for about 10 minutes. Place on a paper towel-lined plate to drain, then crumble and set aside. Reserve about 1 tablespoon of the flavorful bacon grease in the pot, discarding the rest.
  • Saute onion in the delicious bacon grease until tender, approximately 5 minutes. Add potatoes to the pot and pour in just enough water to cover them. Bring to a boil and cook until potatoes are nearly tender, about 5 minutes.
  • Combine fish, evaporated milk, whole milk, and butter in a pot and bring to a boil. Let simmer on low for 30 minutes, then season with salt and pepper.
  • Serve the chowder in bowls and sprinkle with bacon crumbles.
