Simple and delicious coconut cake, perfect for filling and frosting with your favorite coconut icing.
Ingredients:
  • 3 cups sifted cake flour
  • 2.5 teaspoons baking powder
  • 1 cup butter at room temperature
  • 2 cups white sugar
  • 1 cup coconut milk
  • 1 teaspoon almond extract
Instructions:
  • Preheat your oven to 375°F (190°C). Grease and flour three 9-inch cake pans. Combine cake flour, baking powder, and salt in a bowl, whisk together.
  • In a large bowl, use an electric mixer to beat fluffy butter on medium speed. Add eggs one at a time and beat in. Gradually add flour mixture in batches, alternating with coconut milk, then stir in almond and vanilla extracts. Divide batter evenly between the 3 cake pans.
  • Bake the cakes in the preheated oven for 20-25 minutes until lightly browned. Check doneness by inserting a wooden toothpick into the center of each cake - it should come out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
