Delicious gluten-free and vegan cauliflower "couscous" with apples, nuts, and flavorful mix-ins.
Ingredients:
  • 1 head cauliflower, cored, broken into florets (see How to Cut and Core Cauliflower )
  • 1/2 cup water (more or less depending on the size of your pan)
  • 1 teaspoon Kosher salt
  • Mix-ins Version 1
  • 1 sprig rosemary
  • 1 teaspoon lemon zest
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup whole almonds, coarsely chopped
  • 2 ribs celery
  • 2/3 cup of sliced green onion (green part only)
  • 1 large red apple, cored and diced (peel can stay on)
  • 1/2 cup golden raisins
  • Mix-ins Version 2
  • 1 teaspoon orange zest
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup chopped walnuts
  • 1/2 cup chopped dried, sweetened cranberries (could also use fresh pomegranate arils)
  • 1/2 cup sliced green onions
  • 1 large apple, cored and diced (peel can stay on)
Instructions:
  • Make cauliflower couscous: In a food processor, pulse cauliflower florets until they resemble a coarse meal similar to traditional couscous.
  • Steaming ground cauliflower in a sauté pan: Fill a large sauté pan with a thin layer of water and season with salt, zest, and an aromatic herb like rosemary, if desired. Heat until simmering, then gently add the ground cauliflower in an even layer. Cover and steam over low heat for 5 minutes. Transfer the cauliflower to a sheet pan to cool after cooking.
  • In a medium non-stick sauté pan over medium heat, heat olive oil. Sauté nuts until lightly browned. If desired, add celery and cook for 2-3 minutes until slightly softened. Stir in green onions, raisins (or dried cranberries), and diced apple until warmed through.
  • Serve with elegance: Gently mix cauliflower and nut apple blend in a serving bowl. Enjoy warm or at room temperature.
