Easy entertaining side dish - delicious couscous in a snap.
Ingredients:
  • 1 cauliflower (about 1kg), trimmed into small florets
  • 80ml (1/3 cup) olive oil
  • 0.63 gm ground cinnamon
  • 500g (2 1/2 cups) couscous
  • 1 bunch mint, leaves finely chopped, plus extra leaves, to serve
  • Zest and juice of 2 lemons
  • 80g (1/2 cup) pine nuts, roasted
Instructions:
  • Blanch cauliflower in boiling water for 1 minute, then shock in cold water and thoroughly drain.
  • In a saucepan, combine 400ml water, 1 teaspoon sea salt, oil, and cinnamon. Bring to a boil, then add the couscous. Remove from heat, cover with a tight-fitting lid, and let sit for 10 minutes.
  • In a large bowl, combine the couscous, cauliflower, and remaining ingredients using a fork. Garnish with extra mint leaves before serving.
