Roasted cauliflower with brown butter, Pecorino Romano cheese, red onions, mint, and lemon juice.
Ingredients:
  • 4 tablespoons unsalted butter
  • 1 small head cauliflower, cut into florets
  • 0.5 teaspoon kosher salt, plus more to taste
  • 0.5 cup thinly sliced red onion
  • 0.25 cup finely grated Pecorino Romano cheese
  • 10 leaves fresh mint, cut into thin strips
  • 1 tablespoon lemon juice
Instructions:
  • Heat your oven to a piping hot 500 degrees F (260 degrees C).
  • In a skillet over medium heat, gently melt the butter until it turns a light brown color and emits a delightful nutty aroma. Remove from heat.
  • Combine cauliflower florets with rich and nutty brown butter and a touch of salt until fully coated. Spread evenly on a baking sheet.
  • Roast the cauliflower in the preheated oven for about 15 minutes until tender. Toss the hot cauliflower with red onion, Pecorino Romano cheese, and mint. Finish with a drizzle of lemon juice and season with more salt to taste.
