Indian-spiced roasted cauliflower with delicious flavors and textures.
Ingredients:
  • 1 head cauliflower outer green leaves removed, broken into florets
  • sea salt
  • olive oil
  • 1 knob butter
  • 2 teaspoons cumin seeds
  • 2 teaspoons coriander seeds
  • 1-2 dried red chillies
  • 1 handful blanched almonds smashed
  • 1 lemon zest and juice of
Instructions:
  • Preheat the oven to 200°C/400°F/gas 6. Boil the cauliflower in salted water for a couple of minutes, drain well, then coat with olive oil and butter. Crush spices and chili in a mortar with almonds and salt. Toast in a pan until fragrant, then add cauliflower. Cook until golden, then add lemon zest and juice. Transfer to oven and bake for 15 minutes until crispy.
