Cauliflower hummus

Try this: Roasted cauliflower hummus with cumin, tahini, and paprika for a unique and flavorful dip.
Ingredients:
  • 600g cauliflower, trimmed, cut into large florets
  • 27.30 gm extra virgin olive oil, plus 160ml, plus extra to drizzle
  • 5.00 gm cumin powder
  • 2 garlic cloves, chopped
  • 80ml (1/3 cup) tahini
  • 60ml (1/4 cup) lemon juice
  • 60ml (1/4 cup) warm water
  • Smoked paprika, to serve
Instructions:
  • Preheat your oven to 200C/180C fan forced. Arrange the cauliflower florets on a baking tray, drizzle with oil, and sprinkle with cumin. Roast for 25 minutes until tender. Allow to cool slightly before serving.
  • Place the cauliflower mixture into a food processor and add garlic, tahini, lemon juice, extra oil, and water. Blend until creamy. Serve with a generous drizzle of olive oil and a sprinkle of smoked paprika.
