Turmeric blini with beetroot hummus and roasted cauliflower

Try tasty turmeric blinis topped with roasted cauliflower and beetroot hummus for a delightful vegetarian finger food option.
Ingredients:
  • 1/2 trimmed cauliflower, cut into small florets
  • 150g (1 cup) self-raising flour
  • 1 tsp turmeric
  • 250ml (1 cup) buttermilk
  • 1 egg
  • 150g beetroot dip
  • Small fresh coriander or mint leaves, to serve
Instructions:
  • Preheat your oven to 180°C/160°C fan forced and line a large baking tray with parchment paper. Spread out the cauliflower in one even layer on the tray and give it a quick spray of olive oil. Roast for 15-20 minutes until it's tender and beautifully golden brown. Enjoy your delicious roasted cauliflower!
  • Sift flour, turmeric, and a pinch of salt into a bowl, creating a well in the center. In a separate bowl, whisk buttermilk and egg. Pour buttermilk mixture into the flour mixture and carefully fold until combined, being careful not to over-mix.
  • Grease a large frying pan with a touch of oil and warm over medium-low heat. Drop tablespoonfuls of the mixture into the pan in batches. Cook for 1 1/2 minutes until bubbles form, then flip and cook for another minute. Transfer to a wire rack to cool.
  • Cover each blini with a generous layer of vibrant beetroot dip and place a cauliflower floret on top. Sprinkle with fresh mint or coriander, and season to perfection.
