Mediterranean-style cauliflower steaks with hummus, olives, roasted peppers, and nutritional yeast.
Ingredients:
  • 1 head cauliflower
  • 2 cloves garlic, minced
  • 1 cup hummus, or to taste
  • 0.25 cup Kalamata olives, sliced
  • 1 roasted red pepper, chopped, or to taste
  • 1 tablespoon nutritional yeast, or to taste
  • 1 zucchini
Instructions:
  • Prepare the cauliflower by removing leaves and slicing into thick "steaks" that are 1 1/2 to 2 inches thick. Coat both sides with a mixture of olive oil and garlic for extra flavor.
  • Preheat an outdoor grill to medium heat and lightly oil the grate. Grill cauliflower steaks until golden brown on each side, 5 to 7 minutes per side.
  • Spread a lavish layer of hummus on each steak. Sprinkle olives, red pepper, and nutritional yeast evenly over the top. Use a spiralizer to create zucchini ribbons. Finally, adorn the steaks with the zucchini ribbons.
