Elevate cauliflower with garlic brown butter and capers for a tasty side dish.
Ingredients:
  • 1 medium head cauliflower
  • 3 tablespoons olive oil
  • 0.25 cup salted butter
  • 1 clove garlic, minced
  • 2 tablespoons coarsely chopped capers
  • 0.25 teaspoon lemon-pepper seasoning
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and prepare your baking sheet by lining it with parchment paper.
  • Prepare the cauliflower by trimming the stem and creating a flat surface. Slice the cauliflower vertically into 1 to 1 1/2-inch thick pieces, removing any tough stem pieces. Cut the slices into smaller floret-sized pieces and place them on a baking sheet. Drizzle generously with olive oil.
  • Roast in the oven for a total of 20 minutes, flipping the pieces halfway through.
  • Cut the butter into 4 pieces and melt in a small saucepan over medium heat, stirring constantly until it begins to brown (4-5 minutes). The butter will foam up, then subside and should have a nutty aroma. Stir in garlic for 15-20 seconds, then add capers and lemon pepper. Remove from heat.
  • Drizzle the fragrant brown butter over the roasted cauliflower before presenting.
