Cauliflower and bacon gratin

Elevate any dish with the rich, smoky essence of bacon - a versatile ingredient beyond breakfast classics like eggs and toast.
Ingredients:
  • 375ml milk
  • 1 head cauliflower, cut into florets
  • 2 bacon rashers, finely chopped
  • 50g butter
  • 40g plain flour
  • 11.80 gm Dijon mustard
  • 80g cheddar cheese
  • 45g breadcrumbs
Instructions:
  • Preheat your oven to 180C. Boil cauliflower in a large saucepan for 5 minutes until tender. Drain and transfer to a 6-cup baking dish.
  • Cook the bacon in a medium frying pan over medium heat until crisp, approximately 2 minutes. Transfer the cooked bacon to a plate lined with paper towel.
  • In a saucepan over high heat, melt the butter. Stir in the flour and cook for 2 minutes until it becomes slightly grainy. Take off the heat and mix in the milk and mustard. Return to heat, whisking for 5 minutes until the sauce boils and thickens. Remove from heat and stir in half of the cheese until melted and smooth.
  • Drizzle the cheese sauce evenly over the cauliflower. Mix the leftover cheese, bacon, and breadcrumbs in a bowl, then sprinkle it over the sauce. Bake in the oven for 15-20 minutes until golden and hot. Serve promptly.
