Cauliflower and Bacon Egg Bake

Elevate your egg casserole with crispy bacon, toasted cauliflower - a versatile dish for any meal!
Ingredients:
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 large onion, chopped (1 cup)
  • 1 head cauliflower, separated into florets
  • 1 teaspoon salt
  • 1 cup Original Bisquick™ mix
  • 2 cups milk
  • 4 eggs
  • 5 slices bacon, chopped, crisply cooked
  • 2 tablespoons chopped fresh chives
  • 3/4 cup shredded pizza cheese blend
Instructions:
  • Preheat oven to 350°F and generously coat a 3-quart casserole dish with cooking spray.
  • Heat butter and oil in a large skillet over medium heat. Sauté onion for 2 to 3 minutes until soft. Add cauliflower and 1/2 teaspoon of salt. Sauté for another 2 to 3 minutes until cauliflower starts to brown. Transfer mixture to a casserole dish.
  • In a medium bowl, whip together Bisquick mix, milk, eggs, and remaining 1/2 teaspoon of salt with a whisk. Mix in bacon and chives. Set aside 2 tablespoons of cheese; fold the rest into the egg mixture. Pour the mixture evenly over the cauliflower. Sprinkle the reserved 2 tablespoons of cheese on top.
  • Bake without a cover for 35 to 45 minutes or until a knife inserted in the center comes out clean.
