Fast fish pie recipe

30-minute crispy fish pie: Irresistible and quick to make.
Ingredients:
  • 600g firm white fish fillets, cut into 4cm pieces
  • 350g cauliflower, thinly sliced
  • 120g pea
  • 2 slices prosciutto, finely chopped
  • 1/2 bunch dill, sprigs torn
  • 1 lemon, zested
  • 10.00 gm cornflour
  • 2 sheets frozen puff pastry, just thawed
  • 1 Free Range Egg, lightly whisked
  • 3.00 gm sesame seeds
Instructions:
  • Preheat the oven to 200°C. Combine fish, cauliflower, peas, prosciutto, dill, lemon zest, and cornflour in a large bowl. Season generously and toss gently until everything is well mixed. Transfer the mixture to a 6-cup (1.5L) round pie dish.
  • Slice 1 pastry sheet into 3 strips. Coat 2 adjacent edges of the leftover pastry sheet with egg. Layer 1 strip over each edge, slightly overlapping, to create a large square. Use the remaining strip for decorating the pie, if preferred.
  • Brush the edge of the pie dish with egg, then lay the pastry over the fish mixture, pressing it into the edges of the dish. Fold in any extra pastry, brush it with egg, make 3 slits in the center with a sharp knife, and sprinkle sesame seeds on top.
  • Bake the pie for about 25 minutes, or until the pastry turns a beautiful golden brown and puffs up. Slice it into wedges before serving.
