Create a quick and delicious Asian fish dish using salmon or trout.
Ingredients:
  • 4 x 120g skinless salmon or ocean trout fillets
  • 80ml soy sauce
  • 2cm piece ginger, very finely shredded
  • 80ml sweet chilli sauce
  • Steamed white rice, to serve
  • 4 spring onions, thinly sliced on the diagonal
Instructions:
  • Preheat the oven to 200°C. Place the fish in a shallow baking dish and coat it with a mixture of soy sauce, ginger, and sweet chili sauce.
  • Cover the dish with foil and bake for 8 minutes, or until perfectly cooked.
  • Plate the fish on a bed of rice, generously drizzle with sauce, and sprinkle with fresh spring onion for a delightful finishing touch.
