Silverbeet wrapped fish parcels

Delicious Asian fish parcels paired perfectly with rice or noodles for an easy weeknight dinner.
Ingredients:
  • Olive oil cooking spray
  • 4 large silverbeet leaves, stems removed
  • 4 x 180g boneless white fish fillet
  • Salt & ground pepper
  • 1 garlic clove, thinly sliced
  • 4cm piece fresh ginger, peeled, cut into small matchsticks
  • Steamed rice or noodles, to serve
  • Soy sauce & lime, to serve
Instructions:
  • Heat a large non-stick frying pan over medium-high heat. Coat four sheets of foil with olive oil spray.
  • Lay a silverbeet leaf on each sheet, then add a fish fillet on top. Season with salt, pepper, garlic, and ginger.
  • Wrap the silverbeet leaves around the fish, then secure the parcel tightly with foil. Pan-sear the parcels for approximately 6 minutes per side. Serve the fish with rice or noodles, topped with the flavorful juices from the parcel, soy sauce, and a squeeze of lime.
