Turkey bacon and pepper frittata on a cauliflower pizza crust - a memorable breakfast twist!
Ingredients:
  • 1 CAULIPOWER® Margherita Pizza
  • 1 teaspoon olive oil
  • 4 slices turkey bacon
  • 0.25 cup chopped onion
  • 0.25 cup chopped red bell pepper
  • 1 cup chopped fresh spinach
  • 1 clove garlic, minced
  • 0.5 cup egg whites
  • 0.25 cup shredded Cheddar cheese
  • 1 tablespoon chopped fresh basil
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C), then simply place the pizza on a baking sheet.
  • Place in the hot oven and bake for 13 to 15 minutes.
  • Heat olive oil in a frying pan and saute bacon, onion, and bell pepper until tender, about 8 to 10 minutes. Drain off any grease and return to the pan. Add chopped spinach and garlic; stir until spinach is wilted. Transfer to a small bowl and let cool for a few minutes.
  • Take the pizza out of the oven, keeping the oven on. Stir in the egg whites into the vegetable mixture until well combined.
  • Gently spread the vegetable-egg mixture over the pizza, pouring it slowly to prevent any eggs from spilling over the edges. Use a spoon to catch any drips and redistribute them on top of the pizza.
  • After 10 minutes in the preheated oven, add Cheddar cheese and bake for an additional 5 minutes. Finish off by topping with fresh basil after removing from the oven.
