Indulge in a savory spinach and bacon pie - perfect for sharing with loved ones.
Ingredients:
  • Cooking oil spray
  • 1 1/2 sheets frozen brand puff pastry
  • 1 onion, chopped
  • 4 rashers short cut bacon, from the deli, diced
  • 250g chopped spinach, thawed and drained well (see tip)
  • 5 eggs
  • 300 ml cream
  • 125.00 ml tasty cheddar shredded
  • 100g brand Australian style feta
  • Spinach & rocket leaves, to serve
  • Cherry tomatoes, to serve
  • Balsamic dressing, to serve
Instructions:
  • Preheat your oven to 170C (150C fan-forced). Grease a 20cm pie dish. Combine the pastry sheets, place in the dish, crimp the edges, prick the base and sides, then bake for 15 minutes.
  • Heat a frying pan over medium-high heat, spray with oil, and cook onion until softened, about 2 minutes. Then, add bacon and cook until golden brown, about 2-3 minutes.
  • Sprinkle onion mixture and spinach on the pastry base. Mix eggs, cream, cheddar, and feta in a bowl. Season with your favorite spices. Pour the mixture onto the pastry base. Bake for 40-45 mins until beautifully puffed and golden. Serve with a refreshing salad, juicy tomatoes, and your favorite dressing. Enjoy!
