Whip up a satisfying dinner by making egg, black bean, spinach, and cheese quesadillas!
Ingredients:
  • 6 eggs
  • 1/3 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup spinach
  • 6 tortillas from 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • 6 slices bacon, crisply cooked and crumbled
  • 3/4 cup Progresso™ black beans, drained, rinsed
  • 3/4 cup shredded sharp Cheddar cheese (3 oz)
  • Salsa and sour cream, if desired
Instructions:
  • Preheat an 8-inch nonstick skillet over medium heat. In a medium bowl, whisk together eggs, milk, salt, and pepper until well blended. Pour the egg mixture into the skillet and cook, stirring occasionally, for about 3 minutes until eggs are almost set; then add spinach and continue cooking for 2 to 3 minutes until spinach is wilted and eggs are fully cooked.
  • Spread the egg mixture over half of each tortilla, then layer on 1 slice of bacon, 2 tablespoons of black beans, and 2 tablespoons of shredded cheese on top. Fold the tortillas in half.
  • Preheat a 12-inch nonstick skillet over medium heat. Cook 2 filled tortillas at a time for 3 to 4 minutes, turning once, until golden brown and heated through. Cut into wedges and serve with salsa and sour cream.
