Bacon, egg and feta tarts

Indulge in savory bacon, egg, and feta tarts for a delightful weekend treat.
Ingredients:
  • 4 frozen puff pastry sheets, thawed
  • 18.20 gm olive oil
  • 150g chopped bacon
  • 100g feta, drained, crumbled
  • 4 eggs
  • 40.00 ml grated parmesan
  • Wild rocket, to serve
Instructions:
  • Preheat your oven to 200°C while you prepare a baking tray lined with parchment paper.
  • 1. Cut out 13cm circles from each pastry sheet using a saucer as a guide. Place them on a tray. Score a 2cm border around each circle without cutting through. Pierce the area inside the border with a fork. Chill for 10 minutes before proceeding.
  • In a frying pan over medium heat, sizzle the bacon in hot oil until crispy, about 5 minutes. Transfer to a paper towel to drain excess oil.
  • Place feta into each tart base, top with bacon, ensuring to stay within the edges. Bake for 8 minutes or until edges puff up. Lightly press down the center of the pastry with a spoon, crack an egg into each tart, season, sprinkle with parmesan, and bake for 5-7 minutes until eggs are set and pastry is golden. Serve with rocket.
