Cauliflower Purée

Creamy cauliflower mash with a velvety blend of sour cream and butter.
Ingredients:
  • 1 head cauliflower, stem trimmed of leaves, florets roughly chopped (see How to Cut and Core Cauliflower )
  • 1 cup chicken stock , vegetable stock (for vegetarian option), or salted water (if cooking gluten-free, use water or gluten-free stock)
  • 3 tablespoons sour cream
Instructions:
  • Cook cauliflower: Combine cauliflower and stock in a saucepan. Bring to a simmer, cover, and cook until tender, approximately 10 minutes.
  • Blend cooked cauliflower until creamy: In a blender, combine cauliflower with a couple tablespoons of cooking liquid, pulse for 15-20 seconds. Add sour cream, butter, blend for an additional 5-10 seconds. Season with salt and pepper to taste.
