Cauliflower Rice Stir-Fry

Protein-packed cauliflower fried rice made with eggs for a healthier twist on the classic dish.
Ingredients:
  • 2 tablespoons sesame oil
  • 1 teaspoon minced garlic
  • 1 teaspoon grated fresh ginger
  • 2 (12 ounce) packages frozen riced cauliflower medley
  • 4 tablespoons soy sauce
  • 2 eggs, lightly beaten
Instructions:
  • In a large nonstick skillet over medium heat, warm sesame oil. Sauté garlic and ginger until fragrant, around 1 minute. Add riced cauliflower medley and cook until vegetables are tender-crisp, stirring often, about 5 minutes. Mix in soy sauce and cook for another minute.
  • Scoop cauliflower mixture to one side of the skillet. Pour eggs onto the empty side. Cook and stir until eggs are scrambled, around 3 minutes. Combine eggs with cauliflower mixture and cook until heated through, about 1 minute.
