Cauliflower-Cheese Soup

Cheesy vegetable soup with flavorful roux-thickened base.
Ingredients:
  • 0.75 cup water
  • 1 cup cauliflower, chopped
  • 1 cup cubed potatoes
  • 0.5 cup finely chopped celery
  • 0.5 cup diced carrots
  • 0.25 cup chopped onion
  • 0.25 cup butter
  • 0.25 cup all-purpose flour
  • 3 cups milk
  • salt and pepper to taste
  • 4 ounces shredded Cheddar cheese
Instructions:
  • In a large saucepan, bring together water, cauliflower, potatoes, celery, carrots, and onion. Simmer until tender, about 5 to 10 minutes. Set aside.
  • In a separate saucepan, melt butter over medium heat. Add flour and cook for 2 minutes. Remove from heat and gradually mix in milk. Return to heat and simmer until thickened. Stir in vegetables with their cooking liquid, season with salt and pepper. Add cheese and stir until melted. Remove from heat and enjoy!
