Instant Pot® Butternut Squash and Cauliflower Cheese Soup with Yellow Curry.
Ingredients:
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 head cauliflower, chopped
  • 1 butternut squash, peeled and chopped
  • 2 tablespoons yellow curry powder
  • 1 teaspoon salt, or to taste
  • 3 cups shredded mozzarella and Cheddar cheese blend
Instructions:
  • Preheat a multi-functional pressure cooker like an Instant Pot® on Saute mode. Heat olive oil and onion until soft, around 3 minutes. Stir in garlic and cook for another minute. Add broth, cauliflower, and butternut squash. Seal the lid, set it to high pressure following the manual, and set timer for 6 minutes. Give it 10 to 15 minutes to build pressure.
  • Carefully release pressure using the quick-release method following the manufacturer's instructions for about 5 minutes. Unlock and remove the lid.
  • Combine curry powder and salt with the soup in the pressure cooker, blend to your preferred texture using an immersion blender, then stir in a mix of shredded mozzarella and Cheddar cheese blend before serving hot.
