Crispy fried shallots elevate the flavor and texture of this fragrant Balinese rice dish.
Ingredients:
  • 750ml (3 cups) coconut milk
  • 250ml (1 cup) water
  • 125ml (1/2 cup) chicken style liquid stock
  • 1/2 tsp ground turmeric
  • 600g (3 cups) white long-grain rice
  • 1 lemon grass stalk,bruised
  • 62.50 ml chopped fresh coriander
  • 40g (1/2 cup) fried shallot (see note)
Instructions:
  • In a bowl, combine coconut milk, water, stock, and turmeric. Pour the coconut milk mixture over rice in a saucepan and add lemongrass. Bring to a boil over high heat, stirring occasionally. Cover, reduce heat to low, and simmer for 12 minutes.
  • Let rice sit, covered, for 10 minutes off the heat. Fluff with a fork and garnish with coriander and crispy fried shallots before serving.
