Celeriac and parmesan puree

Elevate mashed potatoes with creamy parmesan celeriac blend.
Ingredients:
  • 1.4kg (about 3) celeriac, peeled, coarsely chopped
  • 125ml (1/2 cup) pouring cream
  • 75g unsalted butter
  • 25g (1/3 cup) finely grated parmesan
  • Extra virgin olive oil, to drizzle
Instructions:
  • Simmer celeriac in a large saucepan of water for 20-25 minutes until tender. Drain, then blend in a food processor until smooth.
  • In a saucepan over medium heat, combine cream and butter and bring to a gentle boil. Blend the cream mixture and Parmesan cheese with the celeriac until smooth.
  • Transfer to a beautiful serving bowl, then generously drizzle with your favorite oil and season with freshly cracked pepper.
