Perfect pair: roast lamb with decadent sauce served alongside fluffy, creamy mashed potatoes.
Ingredients:
  • 3 large (about 900g) potatoes, peeled, coarsely chopped
  • 1 large (about 850g) celeriac, trimmed, peeled, coarsely chopped
  • 1 garlic clove, peeled
  • 80ml (1/3 cup) pouring cream
  • 50g butter, chopped
  • Pinch of ground nutmeg
  • Pinch of white pepper
Instructions:
  • Combine potato, celeriac, and garlic in a large saucepan. Cover with cold water and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer for 15-20 minutes until vegetables are tender. Drain and return to the pan.
  • Mash the mixture using a potato masher until smooth. Incorporate the cream, butter, and nutmeg, and continue mashing until well combined. Taste the mixture and adjust seasoning with salt and white pepper before serving.
