Potato and celeriac mash with speck

Elevate traditional mashed potatoes with bold flavors.
Ingredients:
  • 500g Sebago potatoes, peeled, chopped
  • 600g celeriac, peeled, finely chopped
  • 50g speck, cut into batons
  • Butter, for frying
  • 40g butter, chopped
  • 125ml (1/2 cup) milk, warmed
  • Baby herbs, to serve
Instructions:
  • In a saucepan, submerge the potato and celeriac in cold water. Cook over medium heat until tender, about 25 minutes.
  • In a small frypan, crisp the speck in a knob of butter.
  • After draining the potatoes, return them to the pan and dry over low heat for 2-3 minutes. Mash the potatoes until smooth using a potato masher, then slowly mix in the butter and milk. Season with salt and white pepper to taste.
  • Garnish with thin strips of speck, generously drizzle with the flavorful pan juices, and finish with a delicate sprinkle of fresh baby herbs.
