Warm celeriac, potato & carrot salad

Turn a large celeriac and 4 potatoes into a creamy mash by boiling until tender, mashing with butter and milk for a delicious side dish.
Ingredients:
  • 6 small (about 440g) coliban potatoes, quartered
  • 1 carrot, peeled, coarsely grated
  • 250g celeriac, peeled, coarsely grated
  • 85g (1/3 cup) good-quality whole-egg mayonnaise
  • 18.80 gm extra-light sour cream
  • Salt & freshly ground black pepper
  • 20.00 ml coarsely chopped fresh dill
Instructions:
  • Boil the potato in a generously salted large saucepan over medium heat for 6-7 minutes until tender. Drain and let cool in a large bowl for 5 minutes.
  • Let's combine the carrot, celeriac, mayonnaise, and sour cream with the potato. Mix well, then season with salt and pepper to taste. Finish by sprinkling with dill and serving right away.
