Rice noodles & prawns with ginger broth

Warm up with comforting prawn and ginger rice noodle soup.
Ingredients:
  • 2 x 450g pkts pot rice noodles
  • 350g peeled green prawns
  • 1 litre chicken style liquid stock
  • 3 tsp finely grated fresh ginger
  • 10.60 gm soy sauce
  • 1 bunch choy sum, trimmed and halved
Instructions:
  • Cook noodles according to package instructions.
  • In a heavy-based frypan, heat oil over high heat and cook prawns for 2-3 minutes until pink. Season with pepper.
  • Bring the stock to a boil in a pan, then add the ginger, soy sauce, and choy sum. Cook for 2 minutes until the choy sum is tender.
  • Arrange the noodles in bowls, layer with choy sum and prawns, then pour the flavorful stock around before serving.
