Sauté garlic and ginger for a flavorful seafood noodle stir-fry.
Ingredients:
  • 1 x 450g pkt Pot Fresh Rice Noodles
  • 27.60 gm oil
  • 1 brown onion, halved, thinly sliced
  • 2cm-piece fresh ginger, finely grated
  • 1 garlic clove, crushed
  • 300g peeled green prawns, tails intact, deveined
  • 21.00 gm soy sauce
  • 48.80 gm oyster sauce
  • 21.00 gm fresh lime juice
  • 2.50 gm caster sugar
  • 1 x 100g pkt snow pea sprouts, halved
  • 62.50 ml chopped fresh coriander
  • Fresh coriander sprigs, to serve
Instructions:
  • In a large bowl, add the noodles and cover them with boiling water. Let them sit for 2 minutes or until tender. Use a fork to fluff up the noodles, then drain them.
  • Heat a wok over high heat until sizzling. Add oil and swirl to coat. Stir in onion, ginger, garlic, and prawns, and stir-fry for 2 minutes until fragrant, and prawns are curled and changed in color.
  • Combine noodles, soy sauce, oyster sauce, lime juice, sugar, snow pea sprouts, and chopped coriander with the prawn mixture. Stir-fry for 1-2 minutes until the noodles are heated through.
  • Serve the stir-fry in individual bowls and garnish with fresh coriander sprigs before enjoying.
