Cream of celery and celeriac soup

Cozy up with this comforting celeriac and celery soup to warm your soul.
Ingredients:
  • 18.20 gm olive oil
  • 1 medium brown onion, chopped
  • 1 bunch celery, trimmed, washed, chopped
  • 700g celeriac
  • 250g coliban potatoes, peeled, chopped
  • 1.5 litres chicken style liquid stock
  • 189.38 gm pure cream
  • 40.00 ml chopped fresh flat-leaf parsley leave
Instructions:
  • In a large saucepan over medium heat, heat oil until shimmering. Add onion and cook, stirring, for 2 minutes until softened. Add celery, celeriac, potato, and garlic. Cook, stirring, for 5 minutes until lightly browned.
  • Turn up the heat to high and pour in the stock, then cover the pot and bring it to a boil. Reduce the heat to low and let it simmer with the lid on for 30 minutes, or until the celery is tender. Take it off the heat and let it cool for 5 minutes. Blend the soup in batches until smooth.
  • Pour the soup back into the pan over medium heat, then add the cream and mix well. Season with pepper and cook for 5 minutes, stirring occasionally, until heated through. Serve with a sprinkle of fresh parsley on top.
