Creamy homemade broccoli soup with flavorful celery and onions.
Ingredients:
  • 5 tablespoons butter, divided
  • 1 onion, chopped
  • 1 stalk celery, chopped
  • 3 cups chicken broth
  • 8 cups broccoli florets
  • 2 cups milk
  • ground black pepper to taste
Instructions:
  • Prepare your ingredients.
  • In a medium stock pot over medium heat, melt 2 tablespoons of butter until shimmering. Cook onion and celery until softened and fragrant.
  • Simmer broccoli with broth covered for 10 minutes until tender.
  • Carefully pour the soup into the blender, filling it halfway. Secure the lid with a kitchen towel and pulse a few times to start, then puree until smooth. Transfer to a clean pot or use an immersion blender directly in the cooking pot to puree.
  • In a small saucepan over medium to medium-low heat, melt 3 tablespoons of butter. Stir in the flour and add the milk. Cook until thick and bubbly, then add to the soup. Season with pepper and serve.
