Creamy potato soup infused with celery and carrot, enhanced by evaporated milk for a rich texture. Top with fresh chives.
Ingredients:
  • 1 onion, chopped
  • 0.25 cup margarine
  • 8 cups chicken broth
  • 5 baking potatoes, peeled and chopped
  • 4 stalks celery tops
  • 2 carrots, cut into 1 inch pieces
  • 0.5 teaspoon ground white pepper
  • 1 (12 fluid ounce) can evaporated milk
Instructions:
  • In a stockpot, caramelize onions in margarine until soft and golden. Add chicken broth, potatoes, celery tops, and carrots. Season with salt and pepper, then bring to a boil. Simmer until vegetables are fork-tender.
  • Discard carrot and celery tops, then add evaporated milk and heat until warm.
  • Blend soup in batches until smooth, then return to pot on low heat until ready to serve, being careful not to let it burn if not serving right away.
