Elevate creamy potato soup to a hearty main dish with spicy chorizo in flavorful chicken broth.
Ingredients:
  • 4 cups peeled, cubed russet potatoes
  • 0.5 pound ground chorizo sausage
  • 4 ribs celery, chopped
  • 1 medium onion, chopped
  • 1 (32 fluid ounce) container chicken broth
  • 1.5 cups baby carrots, chopped
  • 0.5 teaspoon celery salt
  • salt and ground black pepper to taste
  • 2 cups heavy whipping cream
Instructions:
  • Submerge the potatoes in a bowl of refreshing cold water and leave them be.
  • In a large skillet over medium-high heat, brown and crumble the chorizo for 5 to 7 minutes, stirring occasionally.
  • In a heavy pot over medium-low heat, sauté celery and onion in olive oil until soft, for 7 to 10 minutes.
  • After draining the potatoes, gently combine them with the chicken broth in a pot. Introduce the chorizo, carrots, and celery salt. Season generously with salt and pepper. Allow it to simmer until the carrots are tender, approximately 25 to 30 minutes.
  • Set aside half a cup of heavy cream. Add one and a half cups of heavy cream to the soup. Cook until flavors meld, approximately 10 minutes. Gently heat the reserved cream and mix in flour. Gradually incorporate this mixture into the soup. Let it simmer until thickened, around 7 to 10 minutes.
