Savor the rich and creamy Hungarian mushroom soup with a delightful blend of dill, paprika, parsley, and zesty lemon juice.
Ingredients:
  • 4 tablespoons unsalted butter
  • 2 cups chopped onions
  • 1 pound fresh mushrooms, sliced
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon paprika
  • 2 teaspoons dried dill weed
  • 0.5 cup sour cream
  • 0.25 cup chopped fresh parsley
  • 2 teaspoons lemon juice
  • ground black pepper to taste
Instructions:
  • In a large pot over medium heat, melt butter. Cook and stir onions until softened, about 5 minutes. Add mushrooms and sauté for an additional 5 minutes. Stir in broth, soy sauce, paprika, and dill. Reduce heat to low, cover, and simmer for 15 minutes.
  • In a separate bowl, combine milk and flour, then stir into the soup until well blended. Cover and simmer for an additional 15 minutes, stirring occasionally.
  • Stir in sour cream, parsley, lemon juice, salt, and black pepper over low heat until warmed through, for about 3 to 5 minutes. Serve promptly.
