Get ready for a comforting winter stew!
Ingredients:
  • 36.40 gm Classic Olive Oil
  • 750g gravy beef, trimmed, cut into 3cm cubes
  • 1 large brown onion, finely chopped
  • 200g button mushrooms, quartered
  • 2 large red capsicums, cut into 2cm pieces
  • 40.00 ml plain flour
  • 20.00 gm sweet paprika
  • 510.00 gm beef stock
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 37.60 gm Light Sour Cream
  • Cooked egg noodles
  • Chopped fresh flat leaf parsley, to serve
  • Sour cream, to serve
Instructions:
  • - Preheat your oven to 180°C/160°C fan-forced. - Heat 1 tablespoon of oil in a large, heavy-based casserole dish over medium-high heat. - Brown the beef in batches for 5 to 6 minutes; then move it to a bowl.
  • Heat the remaining tablespoon of oil in a dish, then sauté the onion, garlic, mushrooms, and capsicum for 5 minutes until the onion softens. Add the cooked beef back into the dish and sprinkle in the flour and paprika, stirring for 1 minute. Finally, introduce the bay leaves into the mix.
  • Combine the stock and tomato in the dish, cover it, and bring it to a boil. Then, transfer it to the oven and bake for 2 hours, or until the beef is tender.
  • Transfer 1/4 cup of the flavorful liquid from the goulash into a bowl and mix it with sour cream until smooth. Incorporate this mixture back into the goulash, stirring well. Serve over egg noodles with a sprinkle of parsley and an extra dollop of sour cream for a delicious finish.
